Ingredients
- 2 medium-sized sweet potatoes
- 110g plain flour
- 5 tbsp maple syrup
- 2 tsp vanilla extract
- 150g plant milk
- 50g cocoa powder
- 50g chocolate chips
- 1/2 tsp baking soda
Method
- Wash and dry the sweet potatoes, then steam or bake them until they are soft.
- Once cooked, scoop the sweet potato out of the skin and place it into a bowl.
- Add 2 tsp vanilla essence and 6 tbsp maple syrup to the bowl and mash the sweet potato until it forms a puree.
- Pour in 150ml plant milk and mix well.
- Sift 110g plain flour into the bowl, add 1/2 tsp baking soda and mix until a smooth batter forms.
- Mix in 50g cocoa powder and 3/4 of the chocolate chips.
- Pour the mixture into a lined baking tray and sprinkle the remaining brownies on top. Bake for 15-20 mins at 200°C.
- Once baked, leave the brownie to cool for 10 mins before cutting it into 9 pieces.
