Sweet potato brownies

Ingredients

  • 2 medium-sized sweet potatoes
  • 110g plain flour
  • 5 tbsp maple syrup
  • 2 tsp vanilla extract
  • 150g plant milk
  • 50g cocoa powder
  • 50g chocolate chips
  • 1/2 tsp baking soda

Method

  1. Wash and dry the sweet potatoes, then steam or bake them until they are soft.
  2. Once cooked, scoop the sweet potato out of the skin and place it into a bowl.
  3. Add 2 tsp vanilla essence and 6 tbsp maple syrup to the bowl and mash the sweet potato until it forms a puree.
  4. Pour in 150ml plant milk and mix well.
  5. Sift 110g plain flour into the bowl, add 1/2 tsp baking soda and mix until a smooth batter forms.
  6. Mix in 50g cocoa powder and 3/4 of the chocolate chips.
  7. Pour the mixture into a lined baking tray and sprinkle the remaining brownies on top. Bake for 15-20 mins at 200°C.
  8. Once baked, leave the brownie to cool for 10 mins before cutting it into 9 pieces.
