Ingredients
- 4 slices of rustic bread*
- 2-3 vine tomatoes
- Salt
- Extra-virgin olive oil
- 1 garlic clove (optional)
* I used a sourdough rye loaf
Method
- Slice the vine tomatoes in half and grate each piece into a bowl.
- Stir the grated tomato gently to make the consistency even then add salt to taste and set it aside.
- Toast the bread slices until they are golden brown with a light crisp around the outside.
- If using garlic – peel the clove, slice it in half and rub them all over each slice of bread.
- Spread the grated tomato onto each slice of bread.
- Serve with a drizzle of extra-virgin olive oil.
