Yields: 4 patties
Ingredients
- 1 small red onion (diced)
- 1 garlic clove (minced)
- 1 tsp chilli flakes
- 1 tbsp soy sauce
- A handful of chopped parsley
- Juice of 1 lime
- 1 tbsp tomato puree
- 1 tsp ground cumin
- 2 tsp smoked paprika
- 50g fresh breadcrumbs
- 1 tbsp extra-virgin olive oil
- Salt and pepper
- Optional: homemade cajun chips and salad
Method
1) Mash the black beans and lime juice in a bowl (leaving some chunks in for texture).
2) Mix in the onion, garlic, spices, breadcrumbs, tomato puree and salt and pepper until it all combines.
3) Form 4 burger patties from the mixture and chill them in the fridge for 10 mins.
4) Once the patties are chilled, set them aside. Then heat 1tbsp extra-virgin olive oil in a pan and fry the burgers for 4 mins on each side.
5) Optional: Serve with homemade cajun fries and salad
